Originally called Cipriani Cake, it's a must at any Cipriani restaurant. This cake is made of several layers of delicate sponge cake and vanilla Chantilly cream, finished with a brûléed meringue shell. The name "Bellini" comes from its color, which shares the same delicate hue as our Bellini cocktail.
